Ingredients

🥥 packet of desiccated coconut

🥜 packet of roasted peanut powder

🌿 teaspoon of ground coriander

🧄 1/2 teaspoon of garlic powder

🧅 1/2 teaspoon of onion powder

🌾 1/4 teaspoon of cumin powder

🍬 1/4 teaspoon of sugar or sugar substitute

🧂 a pinch of salt

🍋 a pinch of dried lemongrass powder – optional

🍋 a pinch of tamarind powder – optional

Serundeng is an Indonesian condiment featuring golden, spiced, and fried coconut flakes, often accompanied by peanuts. It’s typically served over rice or used to add crunch and flavor to various dishes. This simplified recipe uses non-perishable ingredients for an easy at-home preparation.

Instructions:

  1. Toast the Coconut:

    • In a dry, non-stick skillet, toast the desiccated coconut over medium heat, stirring frequently until golden brown. Be careful to avoid burning.

2. Mix the Spices:

    • In a small bowl, combine the peanut powder, coriander, garlic powder, onion powder, cumin, sugar, salt, lemongrass powder (if using), and tamarind powder (if using).

3. Combine Coconut and Spice Mix:

    • Lower the heat to medium-low and sprinkle the spice mix over the toasted coconut. Stir well to ensure the coconut is evenly coated with the spices.

4. Finish the Serundeng:

    • Continue to cook the mixture for another 2-3 minutes, allowing the flavors to meld together. Remove from heat once everything is well combined and the coconut is crispy.
    • Let the serundeng cool completely before serving. It can be stored in an airtight container for future use.
