Paella, a revered Spanish rice dish, is celebrated for its vibrant flavors and the ability to bring people together. This simplified version uses non-perishable ingredients to recreate the traditional experience in any kitchen.

Instructions:

  1. Prepare the Ingredients:

    • Soak the dried peppers in warm water until they are rehydrated and soft. Drain and set aside.
    • Dissolve the bouillon cube in 4 cups of hot water to create a broth.

2. Cook the Rice:

    • In a large skillet or paella pan, heat the olive oil over medium heat. Add the drained peppers and sauté for a few minutes.
    • Stir in the diced tomatoes and paprika. Cook for another 2-3 minutes until the tomatoes are softened.
    • Add the rice, stirring to coat it in the oil and tomato mixture.
    • Sprinkle the saffron over the rice, then pour in the prepared broth. Bring to a simmer, then reduce the heat to low and cook, uncovered, for about 15-20 minutes.

3. Add the Seafood and Artichokes:

    • Gently stir in the canned seafood mix and artichoke hearts. Cover and cook for an additional 10 minutes, or until the rice is tender and the liquid is mostly absorbed.

4. Garnish:

    • Remove from heat. Sprinkle dried parsley over the top of the paella.

5. Serve:

    • Let it sit, covered, for a few minutes before serving to allow the flavors to meld together.
